Why this supports your day

Omega-3 fatty acidsProteinB vitamins

Oily fish such as salmon is a natural source of long-chain omega-3 fatty acids (EPA and DHA), which are associated with brain health and cognitive function as part of a balanced diet. Rye bread provides slow-release carbohydrates and fiber that may help support sustained energy. Use gluten-free bread and dairy-free cream cheese as needed.

Ingredients

  • 2 slices dense rye bread (use gluten-free bread if needed)
  • 100g smoked salmon
  • 2 tbsp cream cheese or labneh (use dairy-free cream cheese if preferred)
  • ½ small cucumber, thinly sliced
  • ½ small red onion, finely sliced
  • 1 tbsp fresh dill, roughly chopped
  • 1 tsp capers (optional)
  • Freshly ground black pepper, to taste
  • Squeeze of fresh lemon juice

Method

  1. 1Spread a generous layer of cream cheese or labneh over each slice of rye bread.
  2. 2Layer the cucumber slices evenly across both pieces.
  3. 3Arrange the smoked salmon on top, slightly folded for texture.
  4. 4Scatter the red onion, dill, and capers if using.
  5. 5Finish with a squeeze of lemon juice and a few turns of black pepper.
  6. 6Serve immediately.
