Ingredients

  • ½ cup canned black beans, rinsed and drained
  • 1 large free-range egg
  • 1 cup fresh baby spinach
  • 2 tbsp fresh tomato salsa
  • 1 tsp olive oil
  • Fresh coriander, to garnish

Method

  1. 1Heat the olive oil in a small non-stick skillet over medium heat.
  2. 2Add the black beans and salsa, stirring for 2–3 minutes until heated through.
  3. 3Stir in the spinach until just wilted, then create a small well in the centre.
  4. 4Crack the egg into the well, cover the pan, and cook for 3–4 minutes until the white is set and the yolk is still slightly soft.
  5. 5Slide onto a plate and garnish with fresh coriander.
