Why this supports your day

TryptophanVitamin B6Magnesium

Turkey is a natural source of tryptophan, an amino acid the body uses to produce serotonin and melatonin, which are associated with mood and sleep quality. Sweet potatoes provide Vitamin B6 and slow-release carbohydrates, and walnuts contribute healthy fats and magnesium — making this a balanced, nourishing evening meal as part of a varied diet.

Ingredients

  • 250g lean turkey breast, cubed
  • 1 large sweet potato, cubed
  • 1 red bell pepper, sliced
  • 2 tbsp walnut halves
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp extra virgin olive oil

Method

  1. 1Preheat your oven to 200°C.
  2. 2On a large baking sheet, toss the turkey, sweet potato, and pepper with olive oil and rosemary.
  3. 3Spread in a single layer and roast for 20 minutes.
  4. 4Scatter the walnut halves over the tray and roast for a further 10 minutes until the turkey is cooked through.
  5. 5Serve warm, with a side of simply dressed greens if desired.
