Chamomile is one of the most widely used traditional botanicals in calming contexts, and lavender is traditionally associated with relaxation. The act of preparing and sipping a non-alcoholic ritual drink in the evening may itself be a grounding practice. Ensure lavender used in food is food-grade. Ingredients

  • 1 chamomile tea bag
  • 150 ml freshly boiled water
  • ½ tsp food-grade dried lavender flowers (or 1 drop culinary lavender extract)
  • 1 tsp honey
  • 100 ml sparkling water, chilled
  • Slice of lemon and a sprig of fresh mint, to serve

Method

  1. 1Steep the chamomile tea bag with the lavender in hot water for 4–5 minutes. Cover while steeping.
  2. 2Remove the tea bag, strain out the lavender, and stir in the honey.
  3. 3Allow to cool to room temperature, or chill briefly in the refrigerator.
  4. 4Pour into a glass over ice and top with sparkling water.
  5. 5Garnish with a slice of lemon and a sprig of mint.
