Ingredients
- 1 chamomile tea bag
- 150 ml freshly boiled water
- ½ tsp food-grade dried lavender flowers (or 1 drop culinary lavender extract)
- 1 tsp honey
- 100 ml sparkling water, chilled
- Slice of lemon and a sprig of fresh mint, to serve
Method
- 1Steep the chamomile tea bag with the lavender in hot water for 4–5 minutes. Cover while steeping.
- 2Remove the tea bag, strain out the lavender, and stir in the honey.
- 3Allow to cool to room temperature, or chill briefly in the refrigerator.
- 4Pour into a glass over ice and top with sparkling water.
- 5Garnish with a slice of lemon and a sprig of mint.
