Why this supports your day
Kimchi is a traditional fermented food that contains live cultures, which may support a healthy gut microbiome as part of a varied, plant-rich diet. Research increasingly suggests the gut microbiome is connected to mood, energy, and broader aspects of wellbeing through the gut-brain axis. Add kimchi cold to preserve the cultures.
Ingredients
- 1 cup cooked brown rice
- ½ cup kimchi (unpasteurised — look for 'live cultures' on the label)
- ½ cup shelled edamame
- 1 tsp toasted sesame oil
- 1 tsp sesame seeds
- 1 spring onion, sliced
- 1 tsp tamari (gluten-free soy sauce)
Method
- 1Warm the brown rice gently in a pan or microwave.
- 2Warm the edamame briefly in a small pan with a splash of water.
- 3Divide the rice between two bowls.
- 4Top each bowl with kimchi, edamame, and spring onion.
- 5Drizzle with sesame oil and tamari.
- 6Scatter sesame seeds over the top and serve immediately.
- 7Add the kimchi at the end — do not heat it to preserve the live cultures.
