- 2 chicken thighs (bone-in, skin removed, or boneless)
- 1 large sweet potato, cubed
- 2 large handfuls fresh spinach
- 1 tbsp olive oil
- 1 tsp dried oregano
- ½ tsp smoked paprika
- Salt and pepper, to taste
- Juice of ½ lemon
Method
- 1Preheat your oven to 200°C.
- 2Toss the sweet potato cubes with olive oil, oregano, paprika, salt, and pepper on a large baking tray.
- 3Nestle the chicken thighs among the sweet potato. Season the chicken with salt and paprika.
- 4Roast for 30–35 minutes until the chicken is cooked through and the sweet potato is tender.
- 5In the final 2 minutes, scatter the fresh spinach over the tray and return to the oven until just wilted.
- 6Squeeze lemon juice over the whole tray before serving.
