- 1 cup rolled oats
- ½ cup almond flour
- 2 tbsp coconut oil, melted
- 2 tbsp chamomile-infused honey (steep 1 chamomile tea bag in 3 tbsp warm honey for 10 min, then remove bag)
- ¼ tsp vanilla extract
- Pinch of sea salt
Method
- 1Preheat your oven to 170°C and line a baking sheet with parchment paper.
- 2Prepare the chamomile honey by steeping a chamomile tea bag in warm honey for 10 minutes, then removing the bag.
- 3Combine the oats, almond flour, and salt in a mixing bowl.
- 4Stir in the melted coconut oil, chamomile honey, and vanilla extract until the mixture holds together.
- 5Roll into 8 small balls and flatten gently onto the lined baking sheet.
- 6Bake for 12–15 minutes until lightly golden at the edges.
- 7Allow to cool completely before eating — they firm up as they cool.
